I've made bread from scratch many times before. It is such a big chore and cleanup that I rarely make it anymore. Then along comes the Breadman. I've seen mixed reviews on other bread makers, but let me tell you this thing has blown my mind. Buying bread at the food store will become a rarity from now on. I followed the simple directions which are as easy as; 1) Pick a recipe out of the included book, and add the ingredients in the order in which they are presented. For example liquid first, then your favorite healthy margarine, then the flour, and in this case that was 1 1/2 cups of whole grain/wheat flour, and 2 1/2 cups of bread or all purpose flour. Then add a bit of what else the recipe calls for, and in my first example, that was a teaspoon of cinnamon, 2 teaspoons of orange rind, and then keep the crushed walnuts and raisins for later in the kneading process. There is an automatic dispenser for goodies like that, but when making the 2 pound loaf, they say the extras are larger than the bin is designed to create, so it beeps when it is time to add them. Step 2) Turn the machine on with the on off switch, hit the menu button until you get to the type of loaf you are baking, in this case whole wheat, and hit start. Wahlah instant bread. Well not really instant, but it seems that way because it took you all of 5 minutes to make a loaf of bread.
I wasn't anticipating too much on my first loaf since I was totally new to the machine bread making thing, but I was shocked. This thing turned out great. Oh yeah, and I forgot in the recipe, there is a couple of tablespoons of honey or thereabouts to give the yeast something to feed on, and also flavor enhance the bread. When the loaf was done, I used an oven mitt, and popped it out of the Breadman and into my regular oven which was cool, so it made a great cooling rack. After 5 or 10 minutes I put it on a cutting board and shaved off a slice, and boy was I surprised. This thing tasted like pure gold. My brother who had cinnamon buns in the fridge had a piece also. Later on that day I caught him in the middle of a heist, he wanted another slice of my bread, while the cinnamon buns just sat; it was that good.
I have since made a second loaf of just whole wheat. I had a breakfast sandwich this morning between two slices of toasted whole wheat, and it was a treat.
I had one thing that confounded me, and by accident it turned out the way I like. It is real dense, and nice and moist in the center as well. Even though the crust is thicker than regular bread it is one of the best parts of it. What confounded me was that when setting it to the number 3 Whole Wheat setting, it just sat there and didn't knead the bread mixture right away like the other settings did. I thought something was wrong so I set it to "Rapid Wheat" and it kneaded right away. Oddly enough the whole wheat turned out the way I like it. I wrote to Breadman, and their customer service said that nothing was wrong with the machine, there is a normal 30 minute delay with wheat bread "before" it starts kneading. I guess the moisture in the bottom gets a chance to soak the ingredients for awhile first, and then, it starts to knead. To tell you the truth, I'm happy with it just the way it is.
Anyhow, I have to add that I love fresh baked bread, but don't find the time to make it, so I have been buying it off the open pantry shelves at the local super market. Not only do the people who work there handle it, customers are welcome to handle it as well, and even sneeze on it. Ok, Ok, that seems extreme I know, but the bottom line is, just like Dr Oz said, "Don't buy open pantry breads because of their high rate of contamination". The problem is that twice I got food poisoning from it. I knew it was the bread, because all I had with it was Progresso vegetarian soup that doesn't expire until 2012, plus I let boil real well before serving it. All food poisoning generally is, is a virus or bacteria that gets in the food, and then the stomach. Since our body has powerful stomach acids as a tool to destroy it, but it takes about 4 hours of repeating spasms to get rid of it. So enough of me buying the way more expensive open pantry bread. Now I make my own, and the only person handling it is me.
By the way the average loaf of bread costs less than a dollar to make if you make it yourself, depending on the ingredients. And the thing I like about the fresh made stuff is that it does not have any preservatives. It kind of gives me the creeps to see 10 day old bread, and it doesn't show any signs of decay. I like the way one naturalist book author put it, "The production bread is so bad not even the molds like it". :-)
Anyhow, that is my take on the Breadman. It is the number one selling bread machine, and there must be a reason. I haven't tried the other types, but this thing is great. I love the way the stainless goes with the rest of my kitchen, and clean up is a cinch. The non-stick baking pan is just about as easy to clean as just rinsing it off. A soft sponge with a little soap will even get any surface residue off. So my vote is triple thumbs up. By the way true whole grain flour/bread has the germ and the bran in it which has natural oils that can go rancid, so I keep the whole wheat flour in the refrig, and the finished bread there also. I know bread is better kept in the pantry, but for some reason, the density, and it's moist enough to lend itself to being able to refrigerate and still be the tops of enjoyment. I was even freezing the store bought fresh bread, and then using the Sharp microwave "soften" setting to make it just right before toasting. I don't freeze my home made, and I don't have to soften it either. Enjoy.
